Brunch with Bloody Marys and Boozy Baked Eggs

Wanted to share our fun little Easter brunch party, complete with Bloody Marys.  We had ours for Easter, but this brunch spread is perfect for any occasion!

Ingredients:
  • Bloody Mary Mix (we used a Local San Francisco restaurant's mix)
  • Vodka
  • Lemons / Limes
  • Horseradish
  • Celery
  • Optional fixings of jarred green beans, pearl onions, capers, mini dill pickles

The fun part of these is you can make them as fancy as you like!

We made some other nice apps to have out as our guests arrived, including burrata of course (yes, works great for brunches too!).  I was at Safeway so went for the Belgioioso brand, which did well in my burrata comparison experiment.  Top it with a drizzle of EVOO and sea salt and you have a never fail app!

Our friend picked up some smoked salmon from a great East Coast deli that is right by our place.  

Make it a lox platter with some cream cheese, sour cream (or creme fraiche), capers and green onions (you can do traditional red sliced onion as well).  Serve with toasted bagels, toasted baguettes, or just simple crackers.
I went with three different meats for brunch.  Bacon, breakfast maple sausage links, and crumbled breakfast sausage.  Nice to have a variety, and everyone loves some breakfast meats!

I just pan fried both sausages in frying pans - one trick is to put them in and not move them - that way they get nice and browned and provide that caramelized crust.  For the bacon, I always bake it in the oven - this usually takes about 30-40 minutes with one flip in the middle, so make sure you have enough time.  If you put a large piece of tin foil on the bottom of your tray, you will save lots of time with the clean up.  I always go for the thickest cut bacon I can find - and if you add a sprinkle of brown sugar, everyone will be wondering what that secret is to your amazing bacon.

Spray ramikens with a non-stick cooking spray (eggs stick!), then crack 2 or 3 eggs into each dish (depending on how many eggs you want).  Add in 2-3 tablespoons of cream and then a splash of brandy (about 2 tablespoons) into each ramekin.  Place ramekins on a baking sheet and cover with foil.  Bake for about 35 minutes (or until the whites look cooked).

A Sunday Fritatta

This morning my husband and I were trying to figure out what to do for breakfast.  We were just going to make scrambled eggs but he offered to try something which always leads to something exciting.  He said he wanted to try to make a fritatta so he looked up the basics of a recipe online and got started.

He pulled out:

Egg Whites
White Onion
Green Onion
Parsley
Heirloom Tomatos
Mashed Potatoes (from a previous meal)
Pepper Turkey
Thick Sliced Bacon
Franks Red Hot Wings Buffalo Sauce
Sliced Cheddar Cheese

He then mixed all the ingredients in individual ramekins so we would be able to have one with turkey and one with bacon.  

The results were amazing! What a great breakfast for a Sunday watching the 49ers win agains Carolina.
